Best Pizza Sauce Recipe


This is one of the best pizza sauce recipes. It is simple pizza sauce recipe that uses fresh ingredients. Unfortunately, we don’t make the sauce this often because of the difficulty of finding ripe tomatoes. The Pacific Northwest is a great place to live…but it is not a tomato growing region. We don’t see the sun 8 months out of the year so availability of fresh tomatoes is limited to the summer months.

I do not buy tomatoes at the grocery store for sauces! They are picked far too early and shipped hundreds or even thousands of miles. Vine ripened tomatoes develop a sweetness to them; those picked early have a bitterness to them that will impart off flavors to your sauce.

Our local farmers market has wonderful vine ripened tomatoes available during the summer months. I will make this sauce at least once during the summer months, often several times, and will cook a large batch and freeze it for use later in the year. While frozen sauce is not the same as fresh, it still holds up fairly well…and adding some additional fresh herbs will liven the sauce up quite nicely.

Ingredients:

  • 6 to 8 Plum Tomatoes
  • 2 Tbs Chopped, fresh Basil
  • 2 Tbs Chopped, fresh Oregano
  • 1 Clove Garlic, Minced
  • ½ Tsp Cayenne Pepper
  • 1 Tsp Salt
  • ½ Tsp Pepper

Directions:

  1. Carefully put tomatoes into a pot of boiling water for 20 seconds.
  2. Retrieve them with a slotted spoon and place them in a bowl of ice water to cool.
  3. When cool enough to handle, use a paring knife to remove the core end of the tomato and peel away the skin.
  4. Cut tomatoes length wise and seed tomatoes.
  5. Coarsely chop tomatoes by hand or food processor and put into a sauce pan, adding remaining ingredients to the pan as well.
  6. Simmer sauce for 30 minutes over low heat, stirring occasionally.

For a smoother sauce blend in a food processor until the desired consistency is achieved. The sauce can be refrigerated in a tightly sealed container for a week or two, or frozen.
