Buttermilk Pizza Dough


This buttermilk pizza dough recipe starts with a basic dough recipe and then incorporates buttermilk to impart a full, rich flavor to the dough. My grandmother used buttermilk in most all of her baking recipes, and my grandfather drank a glass of buttermilk every day for his entire life.

The following buttermilk pizza dough recipe will make enough dough for one (1) approximately 14 inch (large) diameter pizza. You can scale this recipe to any quantity you like and that will fit your equipment. For example, if you want to make 2 large pizzas simply double all of the ingredients.

Ingredients:

  • 3/4 Cup Buttermilk, room temperature
  • 1 Tbs Olive Oil
  • 1/4 Tsp Salt
  • 1/4 Tsp Baking Soda
  • 1 Tsp Active Dry Yeast
  • 2 Cups Bread Flour

Directions:

  • Dissolve 1 package of yeast in ½ cup plus 2 Tbs of lukewarm water.
  • See Activating Yeast for complete instructions
  • Place flour in bowl of electric mixer
  • Add dissolved yeast, oil, buttermilk, baking soda, and salt
  • Using dough hook, mix well at medium-low speed until all ingredients are incorporated
  • Increase speed to high and mix dough for 4 to 5 minutes
  • Dust or oil dough ball and place in a large bowl, and cover with plastic wrap
  • Let rise in a warm, draft free place for 1 to 3 hours.

A bread flour is higher in gluten and will give this crust a nice, crisp texture.
