Easy Homemade Pizza

Fresh Tomato Pizza Sauce


Fresh Tomatoes give this pizza sauce great flavor. Combine with homemade dough and fresh toppings for a great meal your family will love.

Use Plum tomatoes for this sauce. Plum tomatoes have a firm, solid inside that is suited for use in sauces; they also contain fewer seeds and less juice. Roma are a variety often found in neighborhood grocery stores.

If I am going to the trouble of making fresh pizza sauce, I usually make a larger batch and keep extra in the refrigerator if I plan on using it in a few days, or put into containers to freeze. The frozen sauce will not have the same fresh flavor but is still better than canned sauce.

Ingredients:

  • 2 Lbs. Plum Tomatoes2 Lbs. Plum Tomatoes
  • 3 Tbs. Tomato Paste
  • 1/4 Tsp. Oregano (dry)
  • 2 Tsp Sugar
  • 1 Clove Garlic (fresh)
  • 1/4 Tsp Salt
  • 1/8 Tsp Fresh Ground Pepper

Directions:

  1. Place tomatoes into pot of boiling water for 1-2 minutes. Take them out of pot and drop into bowl of ice water until cooled and you are able to handle. Using a small paring knife remove; skin, seeds, and liquid.
  2. Finely chop tomatoes.
  3. Place all ingredients into sauce pan. Cook on a low simmer for 2 hours until sauce thickens…stirring occasionally. (Note: If in a rush for time cook for 30 minutes and then serve. The flavors are not as developed but still tastes pretty good)

As a general rule, 1 lb of fresh tomatoes will yield 6 oz of cooked sauce. If you plan on making larger batches, just double or triple recipe as needed.

Don’t be afraid to experiment with different herbs and spices to match the tastes of YOUR family. One of the pleasures of cooking is trying new things…not everything goes according to plan, but even our mistakes are opportunities to learn what works and what doesn’t.

Remember…a sauce tasted straight from the pan will taste very different when combined with your other pizza ingredients. Try and plan accordingly and adjust your seasonings to compliment the toppings. For example, I might add more salt to the sauce if I am planning on using a few vegetables as toppings. Because vegetables do not contain salt…I will “punch up” the sauce to compliment these toppings. In contrast, if Pepperoni is that nights topping choice I will not add additional salt because of the salt contained in the Pepperoni.
