Easy Homemade Pizza

Roasted Vegetable Pizza


This roasted vegetable pizza recipe is delicious and healthy. Roasting adds tremendous flavor and sweetness to vegetables.

Any vegetable that stands up to roasting will work; you can substitute your favorites or experiment with vegetables you have handy. We will make this pizza in the summer quite often, and often will use leftover grilled vegetables from a meal earlier in the week.

I really like accompanying the vegetables with the Super Sauce which has loads of flavor itself, and the herbs and spices work really well with the roasted vegetables. Grilling adds even more flavor!

Ingredients:

  • 3 Tbs Extra Virgin Olive Oil
  • 1 Red Bell Pepper
  • 3 Cloves Garlic
  • 2 Shallots
  • ½ Cup Asparagus – Trimmed and Cleaned
  • 1/3 Cup Super Sauce – Substitute Preferred Sauce
  • 1 Cup Grated Mozzarella Cheese
  • ¼ Cup Grated Parmesan Cheese
  • Salt & Pepper to Taste

Directions:

    1. Preheat oven to 250 degrees
    2. Place vegetables in baking dish
    3. Pour olive oil over vegetables coating nicely
    4. Bake vegetables in 250 degree oven for 45 minutes
    5. Stir occasionally to prevent sticking and burning
    6. Remove vegetables and let cool
    7. Seed and core bell pepper and cut into slices
    8. Peel garlic and shallots and chop finely (ingredients will be very soft)
    9. Chop Asparagus into edible pieces
    10. Spread sauce evenly on pizza
    11. Layer mozzarella cheese, bell pepper, asparagus, garlic, and shallot ingredients on pizza
    12. Sprinkle parmesan cheese over toppings
