Spinach and Mushroom Pizza


This spinach and mushroom pizza recipe is both great tasting and good for you. The popularity of mushrooms has increased during the past decade, and the varieties of mushrooms now available at your local grocery store proves it.

You can use your favorite type of mushroom for this recipe, and use several types to blend flavors and textures. Mushrooms are rich in vitamins and minerals, and are an excellent source for Selenium. A serving of Crimini mushrooms provides almost 1/3 of the RDA for Selenium, which studies have shown can dramatically reduce the risk of prostate cancer.

Mushrooms are also high in the B-vitamins Riboflavin, Niacin, and Pantothenic Acid, and a source for Potassium as well.

Spinach is another great health food. Spinach is considered a power food in the world of health and nutrition because it is loaded with essential nutrients. It contains high levels of calcium, folate, iron, magnesium, vitamin C, and vitamin A.

I prefer Baby Spinach, which is characterized by its small leaves and usually much more tender than the larger leaves. Look for spinach that is bright green in color with thin stems, and do not buy product that is wilted or contains spots.

Try this spinach and mushroom pizza for a light, healthy alternative.

Ingredients:

  • 2 Tbs Olive Oil
  • 1 Clove Garlic, Minced
  • 2 oz Mushrooms, Fresh
  • 1 Cup Spinach, Fresh – Firmly packed
  • ¼ Tsp Salt
  • ¼ Tsp Black Pepper
  • 1/3 Cup Pizza Sauce
  • 1/3 Cup Mozzarella Cheese, Grated
  • ¼ Cup Parmesan Cheese, Grated

Directions:

  1. In a sauté pan, heat oil on medium-low heat
  2. Add Mushrooms, Spinach, and Garlic and sauté lightly until spinach wilts
  3. Add salt and pepper
  4. Remove from heat and allow to cool
  5. Spread sauce on pizza dough
  6. Layer spinach mixture evenly over sauce
  7. Layer mozzarella cheese and parmesan cheese ingredients on pizza
