Easy Homemade Pizza

Taco Pizza

This taco pizza combines the flavor of Mexico and Italy...what could be better?

I found that our family rarely follows the recipe exactly, instead, we substitute what we have in the refrigerator or pantry. For example, the recipe does not call for use of Sour Cream but my daughter and I love sour cream so I finish off the cooked pizza with a nice big dollop.

Fresh salsa works great with the flavors as well. If you don't have the time or energy to make your own fresh salsa...your local mexican restaurant will usually selll you some.

Ingredients:

  • 1/2 Cup Refried Beans
  • 1/3 Cup Fresh Salsa
  • 1/2 Cup Grated Cheddar Cheese
  • 1/2 Cup Grated Monterey Jack Cheese *
  • 1 Cup Grated Mozzarella Cheese
  • 1/4 Cup Scallions, Diced
  • 1/4 Cup Black Olives
  • Red Pepper Flakes to Taste

*Substitute a Monterey Jack cheese with Jalepenos for a spicier flavor.

Add Jalepenos or hot peppers to taste. Hot sauce is another great choice.

Directions:

  1. Spread refried beans evenly over pizza crust
  2. Spoon salsa over refried beans
  3. Layer cheeses evenly
  4. Sprinkle scallions and olives over cheese, add red pepper flakes to taste

We will also add chicken or ground beef to the recipe at times. Try different flavor combinations.
