Easy Homemade Pizza

Veggie Pizza Recipe


This veggie pizza recipe uses some of our favorite vegetables. Substitute your family favorites, or use what is fresh and in season.

I prefer to steam the broccoli and asparagus to ensure they are tender, and cook evenly with the rest of the ingredients. If you prefer, all of the vegetables can be placed on the pizza raw. Another option is to grill or oven roast the vegetables, covering with a little olive oil, salt, and pepper. If you have the time this adds wonderful flavor to the vegetables, and is a wonderful combination for the pizza.

This pizza is loaded with vitamin and minerals, is low in fat, cholesterol, and sodium. It is satisfying to know that you can create great tasting, healthy meals for your family…and not worry about all of the preservatives, empty calories, and nutritionally void food that represents a good portion of today’s food industry.

Ingredients:

  • 2 Tbs Olive Oil
  • 1 Clove Garlic, Minced
  • 2 oz Mushrooms, Fresh
  • 1 Cup Spinach, Fresh – Firmly packed
  • ¼ Tsp Salt
  • ¼ Tsp Black Pepper
  • ¼ Cup Broccoli, Steamed and Chopped
  • ¼ Cup Asparagus, Steamed Chopped
  • ¼ Cup Bell Peppers, Sliced
  • 1/3 Cup Pizza Sauce
  • 1/3 Cup Mozzarella Cheese, Grated
  • ¼ Cup Parmesan Cheese, Grated

Directions:

  1. Ahead of time, steam chopped broccoli and asparagus. Set aside
  2. In a sauté pan, heat oil on medium-low heat
  3. Add Mushrooms, Spinach, and Garlic and sauté lightly until spinach wilts
  4. Add salt and pepper
  5. Remove from heat and allow to cool
  6. Spread sauce on pizza dough
  7. Layer spinach mixture evenly over sauce.
  8. Layer mozzarella cheese and parmesan cheese ingredients on pizza
  9. Layer broccoli, asparagus, and bell peppers on pizza
