Veggie Pizza RecipeThis veggie pizza recipe uses some of our favorite vegetables. Substitute your family favorites, or use what is fresh and in season. I prefer to steam the broccoli and asparagus to ensure they are tender, and cook evenly with the rest of the ingredients. If you prefer, all of the vegetables can be placed on the pizza raw. Another option is to grill or oven roast the vegetables, covering with a little olive oil, salt, and pepper. If you have the time this adds wonderful flavor to the vegetables, and is a wonderful combination for the pizza. This pizza is loaded with vitamin and minerals, is low in fat, cholesterol, and sodium. It is satisfying to know that you can create great tasting, healthy meals for your family…and not worry about all of the preservatives, empty calories, and nutritionally void food that represents a good portion of today’s food industry.
